Carrot Ginger Raisin Red Cabbage Slaw

I love cole slaw, but I’m trying to stay away from vegetables oils (excluding olive oil, coconut oil, and palm oil), so that means no mayonnaise which most cole slaws are made with. Staying away from veggie oils also means the vast majority of pre-made salad dressings are off limits. However, there is a really nice Carrot Ginger Salad Dressing that I’ve purchased from Whole Foods a few times that contains no oil and tastes amazing. It’s called Cindy’s Kitchen Carrot & Ginger Dressing. No only does it contain no oil, but it’s also low sodium. Carrot Ginger Dressing

As per the Cindy’s Kitchen website, the ingredients are: Carrot Puree (Carrots, Water), Carrots, Mirin, Pear Juice Concentrate, Peach Juice Concentrate, Organic Hawaiian Ginger Puree (Ginger, Water), Organic Tamari Soy Sauce (Water, Organic Soybeans, Salt, Organic Alcohol), Rice Vinegar, Apple Cider Vinegar, Sesame Seeds. *GLUTEN FREE, OIL FREE, LOW SODIUM, NO SUGAR ADDED. *CONTAINS: SOY, SESAME SEEDS..

I can’t recommend this dressing for anyone on the Specific Carbohydrate Diet because it has Mirin as the third ingredient and Mirin is not SCD legal. However, every other ingredient is okay so it might be good for those have healed and are transitioning to a more expansive diet that includes a few non-SCD foods. One again, everyone is different, and it’s always trial and error to see how you feel. But otherwise, it’s gluten-free, oil free, low sodium, and has no added sugars = an overall great product in my view.

I love to eat it on salads, and I especially love to use it for slaws. One day I had some red cabbage in the house that I needed to use up, and I had some golden raisins in my pantry. I also had some Carrot Ginger Dressing left. I decided to combine all three and make a carrot ginger raisin red cabbage slaw. As you can see in the photo above, it was so pretty and colorful. It tasted great also. The flavors really work well together and the soft sweet chewy raisins perfectly compliment the crunchy red cabbage and tangy carrot dressing.

I don’t have a recipe or quantities because I don’t think you really need one. Just chop up or grate some red cabbage, add a handful or two of golden raisins (depending on how much cabbage you’re using), and top with carrot ginger dressing. Stir to combine or serve like a salad and everyone stirs their own. So yummy.
